10th Anniversary Ribs by Jill Goddard and Ron Kraus of Newhall CA from The Garlic Lovers Cookbook Vol 2
Makes 2 to 3 servings
Ingredients
8 cloves fresh garlic, minced
3 8 ounce cans tomato sauce
3 small onions minced
2 cups red Wine HINT Rapazzini Winery makes a red Garlic Cooking wine for more garlicky flavor
1 4 ounce can diced green chiles
5 tablespoons maple syrup
3 tablespoons EACH soy sauce and red wine vinegar
2 tablespoons prepared mustard HINT Mama Raps garlic mustard is great
1 tablespoon Worcestershire sauce
1 teaspoon celery seed
1/2 teaspoon black pepper
1/4 teaspoon EACH cayenne pepper and smoke salt
3 to 4 pounds beef or pork ribs
Method of Preparation
Combine all ingredients, except ribs in a a large enamel kettle. Bring to a boil, reduce heat and simmer uncovered 1 hour stirring occasionally. Meanwhile place ribs in a deep pot, cover with water. Bring to a boil, cover and simmer 45 minutes to 1 hour to remove fat and tenderize ribs. Remove ribs to a shllow baking pan, pour sauce over and bake 30 minutes at 350 degrees F turning and basting occasionally.
