John's Neapolitan Beef Entree by Vicki Leffler, Independence, KY from The Garlic Lovers Cookbook Vol2
Makes about 8 servings
Ingredients
1/3 cup chopped onion
4 or more cloves fresh garlic crushed HINT The Amazing EZ roll garlic peeler can so this in seconds
1 cup diced carrots
1/2 cup diced celery
1/4 cup salad oil
1 1/2 pounds ground chuck
1 (16 ounce) can tomatoes
1 ( 6 ounce) can mushrooms, drained
1 ( 6 ounce) can tomato paste
1/2 cup sherry
1 teaspoons salt
1/2 teaspoon EACH pepper, dried oregano and basil
8 ounces shell macaroni, cooked
1 ( 10 ounce) package frozen spinach, drained
1 cup grated sharp Cheddar cheese
1/2 cup buttered breadcrumbs
Parmesan Cheese
Method of Preparation

Saute onion, garlic, carrots, and celery in oil for 5 minutes. Add meat, cook and stir until lightly browned. Add next 8 ingredients. Simmer uncoverd 1 1/2 hours. Add macaroni and spinach mix well. Turn into a 2 quart casserole. Top with cheddar cheese and breadcrumbs. Bake uncovered at 325 degree F about 30 minutes or until hot.
Serve with PArmesan Cheese.
