Garlic Spareibs by Elaine Dair, South San Francisco Ca from The Garlic Lovers Cookbook Vol 2
Makes 4 servings
Ingredients
3 pounds spareribs
8 cloves fresh garlic, finely chopped HINT Mama raps sells a chopped garlic by the jar.
6 tablespoons EACH soy sauce and oyster sauce
3 tablespoons dry sherry
Hot chili oil (optional)
chopped green onions ( optional)

Method of Preparation
Chope spareribs into bite sized pieces. Cover with water and bring to a boil. Parboil spareribs 10 minutes. Drain and rinse with cold water. Combine remaining ingredients except chili oil and green onion. Mix with spareribs and place on a heat proof dish on a rack in a steamer. Steam 45 minutes. Garnish with green onion and serve with chili oil if desired.
