Zucchini Leaves by Rose Montgomery, Redding,CA from The Garlic Lovers Cookbook Vol2
Makes 8 servings
Ingredients
8 fresh zucchini about 7 inches long
2 cups cottage cheese
2 eggs, well neaten
1/4 cup minced parsley
3 cloves fresh garlic, minced
Salt and white pepper to taste
Dash nutmeg
1/4 cup grated Cheddar cheese
Method of Preparation
Slice zucchini in half lengthwise and parboil in boiling water for 10 minutes until just tender not soft. Drain and scoop out centers and discard. Turn zucchini shells onto paper towels to drain and cool. When cool, place shells in an oblong buttered baking dish. Combine remaining ingredietns and fill zucchini shells, dividing mixture evenly. Sprinkle each shell with cheese. Bake at 350 degrees F for 15 to 20 minutes.
