Zucchini Zapi by Cynthia Kannenberg, Brown Deer, Wi from The Garlic Lovers Cookbook Vol2
Serves 6
Ingredients
3 pounds fresh zucchini sliced
1/2 cup chopped onion
6 tablespoons butter softened
3 cloves fresh garlic minced
10 saltine crackers crushed
1 cup grated sharp Cheddar cheese
2 eggs beaten
Seasoned salt and freshly ground pepper to taste
Italain seasoned dry breadcrumbs
Paprika and fresh parsley springs for garnish.
Method of Preparation
Boil zucchini for 20 minutes. Drain and mash. Saute onion in 2 tablespoons of butter and add to zucchini with garlic, crackers, cheese remaining 4 tablespoons butter, eggs and seasonings. Mix well. Pour into a greased 9 by 13 inch casserole and sprinkle with breadcrumbs. Bake at 350 degrees F for 30 minutes, Garnish with paprika and sprig of parsley.
